परफेक्ट गुलाब जामुन
INGREDIENTS :
1) MAWA – 270 GM
2) PANEER – 70 GM
3) SUGAR – 2 CUP ( 400 GM )
4) MILK POWDER – 1/4 CUP
5) ALL PURPOSE FLOUR – 1/4 CUP
6) BAKING POWDER – 1 TSP
7) CARDAMOM – 3
8) ROSE WATER – 1 TSP
9) GHEE FOR FRY

Method :

Take a big plate and put mawa in it.

Kneed mawa with help of palm to make it smooth. We need smooth mawa hence kneed properly for 6-7 minutes

Add paneer and kneed for 2-3 minutes to make smooth.

Add milk powder, all purposer flour, baking powder and mix well.

Prepare dough .

Preparation for sugar syrup :

Take a pan and put on gas with high flame. Add sugar and 2 cups of water. Stir properly and let it boil till it become honey – no need of any string ( taar ) . Just need little sticky.

Add cardamom and rose essence.

To check , take drops in a spoon and take it between two fingers. If it is not forming any string then syrup is ready.

Turn off gas.

Making Gulab Jamun :

Take small lemon size dough in hand and roll to form ball shape. Ensure no cracks are formed . If crack is formed then dough is not proper and kneed more to make smooth.

Prepare all balls in same way.

Put a pan with ghee on gas with high flame. When ghee is medium to low hot then add gulab jamun ball and check if it is not getting cracks. If not then add one bye one.

Fry till they become golden brown in color. Take them out and add in sugar syrup directly. It takes 10-12 minutes for frying gulab jamun.

Keep them dipped in sugar syrup for 6-7 hours.

Serve them in dish and enjoy mouth watering soft Gulab Jamun
