Rabadi Kevai Katori Recipe

Ingredients :
1)  SEVAIYA – 1 CUP
2) GHEE – 1 TBSP
3) MILK – 500 GM
4) MILK POWDER – 1/2 CUP
5) ALMOND + CASHWE NUTS – 1 TBSP CHOPPED
6) APPLE – 1
7) CARDAMOM – 4 POWDER
8) SAFFRON THREAD – 4-5
9) SUGAR – 4 TBSP
10) CHERRY – FOR GARNISHING
11) SUGAR – 1/3 CUP
Method :
Put a pan on gas with high flame. Add sugar and 1 cup of water.
Boil till sugar get melted.
Put a kadhai on gas with low flame. Add ghee. When ghee is hot, add sevaiya and roast for 2-3 minutes till it become golden brown in color.
Put a pan on gas with high flame and add milk. Let it boil to make thick till become half in quantity.
Sugar is melted now. Turn of gas and transfer sugar water in sevaiya pan. Mix well. Let it boil till all water is absorbed. Turn off gas.
Take silicon moulds or any moulds of aluminium. Add sevaiya in moulds and press with spoon to give shape of cup. Press to make cavity in center so that we can put rabadi. Let them cool down and then put in freeze for 20 minutes.
Milk is ready. Put a pan on gas with low flame and add sugar. Take apple and grate apple in pan. Mix sugar and grated apple. Make smooth paste.
Turn off gas. Add milk powder and prepared milk. Mix well. Turn on gas flame. Add kesar thread, cinnamon, almonds, cashew nuts pieces. Mix well and cook for 2 minutes till it become thick.
After 20 minutes. take out sevaiya moulds.
Unmould sevaiya from moulds . Add rabadin sevaiya all cups.
Garnish with cherry.
Serve in a plate and enjoy mouth watering taste.
